2 Pea Soups for 10 minute Meals

There’s something so quick about whipping together a soup. I can’t get enough of them right now - hot or cold.

  1. Pea & Mint Soup

Ingredients:

  • 2 cups frozen peas

  • A large bunch of mint

  • 1 clove of garlic

  • Salt & Pepper

  1. Place the frozen peas in pan and cook for 5 minutes

  2. Drain the peas and add to blender with a bunch of mint, garlic and the stock (veggie or chicken).

  3. Blend.

  4. Add salt and pepper to taste.

  1. Courgette, Rocket, Peas & Basil

Ingredients

  • 1 courgette

  • 1 cup peas

  • 1 large handful rocket

  • 1 handful of basil

  • 1 teaspoon of cumin seeds

  • Salt & Pepper

    1. Cut the courgette into rounds and place in a pan with olive oil and cumin seeds and fry for a few minutes

    2. Add in the frozen peas, basil, rocket and veggie (or chicken) stock.

    3. Place a lid and cook for 10 minutes.

    4. Blend.

    5. Add salt and pepper to taste.
